A light dessert, with a crunchy fruity meringue topped with fresh whipped cream and delicate raspberries. A delicious meringue and raspberry dessert to the last crumb.
It looks very much like Pavlova , only the meringue top is thinner and obviously has a different texture.
- 100 g egg white
- 100 g sugar
- 1 tablespoon concentrated strawberry and raspberry syrup
- 1 tablespoon strawberry pudding powder Dr. Oetcher
- For the filling:
- 250 ml whipped cream
- 1 whipped cream hardener
- 1 sachet of vanilla sugar
Preparation Dessert with meringue and raspberries:
Whisk the egg whites with a pinch of salt. Add the sugar spoon by spoon, mixing well after each one. At the end we will get a glossy foam, which makes spikes when we remove the blades from the mixer. Add the pudding powder and mix gently, then the concentrated syrup.
We put the meringue in a posh and in a tray lined with baking paper we sprinkle spirals of meringue, of the desired size. Put the tray in the oven over medium heat, with the oven door open. Leave in the oven until the meringue spirals dry.
Lightly peel them off the baking paper and leave them to cool on a grill.
Whip the whipping cream until it becomes fluffy. Add the vanilla sugar and whipped cream hardener and mix until it hardens enough. Do not insist too much, not to cut.
- If you want, you can sweeten the cream. I didn't add any more sugar, I thought the meringue top was sweet enough.
Put whipped cream on one of the tops, then raspberries as desired. Cover with another worktop and continue the operation. We make the turrets as high as we want. 🙂
