When I was a kid, I didn’t know anyone who would make these cakes at home.Dobos, Diplomat, Savarina, Ecler, Amandina , etc.… are all part of the elite of confectionery cakes. Today, we make them easily enough at home. This is also due to the ingredients that are found, but also to our evolution, gastronomy, people’s interest in food or homemade desserts.
We all know that Dobos is a somewhat pretentious cake / cake. The sheets are to blame !!JMake 7 or 8 thin sheets, which are filled with a delicious chocolate cream. If you want to make the cake option, my tip for you is to make two sheets in the large tray of the stove. After baking and cooling, measure them with a ruler and cut them, obtaining 6 equal sheets. What has changed in my cake? The sheets are not the classic ones, the very thin ones that are made from an egg. They are double sheets, the same ingredients, but double quantities. The cream is exactly the same, the assembly and the decoration is different. But let’s see together how we did it!

Ingredients for dobos cake:

For sheets (quantities given are for 1 sheet of cake) x4:
1 pinch of salt
2 tablespoons melted butter
2 tablespoons flour
For the cream:
1 pinch of salt
2 tablespoons black cocoa
150 gr chocolate 60% cocoa
250 gr fatty butter 82%
1 sachet of Finnesse vanilla extract from Dr. Oetker
50 ml rum (I use the cane drink, ROM)
For decoration: walnuts, hazelnuts, pecans, hazelnuts drawn in caramelized sugar
METHOD OF PREPARATION:
For the sheets: whole eggs are mixed together with the salt powder and the sweetener Edulcorem Stevia until they triple their volume and become creamy. It doesn’t take long, 3-4 minutes. We turn off the mixer and now we work with a spatula. Add melted and cooled butter, flour and mix with a spatula with light movements from bottom to top, until the ingredients are incorporated. Because I made a round cake, I used a round silicone shape, which I lined with baking paper. Bake the top in the oven heated to 170 degrees for 10-12 minutes, depending on the oven. When the countertop is slightly brown on the surface, it is firm to the touch and comes off easily from the edges, it means that it is baked. Remove the top from the silicone, let it cool for 5 minutes, remove the baking paper, then leave it to cool completely. Repeat the procedure until we get 4 sheets.

The cream for Dobos is one that is made on a steam bath. So, we choose a suitable saucepan and a bowl that overlap. Put whole eggs, salt powder and sweetener Edulcorem Stevia in the bowl. Beat the eggs at low speed until mixed, then place the bowl on a steam bath and mix at a moderate speed for about 10 minutes. It tends to thicken, cream, but don’t expect it to be I don’t know how thick. That’s just a story. We don’t make omelettes from eggs… the idea is that the sweetener or sugar, depending on what you use, must be melted, have a certain creaminess / texture, and be hot to the touch. Separately, melt the chocolate on a steam bath with 1 tablespoon of butter. Add melted chocolate to the egg cream. Gradually add in several tranches and mix with a whisk or mixer at low speed. At the end, the flavors are added. I like vanilla or rum for Dobos. But I do not use rum essence, but alcoholic beverage. Allow to cool. In another bowl, beat the butter with the cocoa. Gradually add the egg cream to the butter cream after it has cooled. Refrigerate for 20 minutes, the cream to be slightly hardened, but not completely. Since it is a butter-based cream, if it stays in the fridge it hardens. The cream should be slightly soft, easy to apply.

Assembly: place the first countertop sheet on a countertop. The cream is put in a pos and molds are formed on the entire surface of the countertop. Put the next sheet, then the cream and so on until we finish the overlapping sheets and cream. Be careful when you put the cream with the powder to stay for the top. That’s all!! Refrigerate the cake for 2-3 hours. Decorate as you like… I powdered it with black cocoa, I used different nuts and hazelnuts. Because I wanted to use some of the classic Dobos, I melted sugar and pulled some hazelnuts into caramelized sugar. From the rest of the caramel I made some shapes on the baking paper.
