Easter with cheese without dough
- 1 kg of sweet soft cheese
- 250 g sugar
- 7 eggs
- 175 g melted and cooled butter
- 1 vanilla essence
- 5 tablespoons white flour
- 3 tablespoons gray wheat
- 5 g baking powder
- 2 tablespoons milk powder (you can replace with 2 tablespoons of semolina or flour, if you do not have at hand)
- 100 g raisins
- Half a teaspoon of salt
Easter without dough can be an alternative to the classic recipe that accompanies an important period of the Christian year, being loved because it is softer, finer and lower in calories, because it no longer includes crust and dough roll. In addition, it can be made in the rest of the year, taking the place of cheesecake or soufflé, very easily.
To make a fluffy and airy product, soft and light, you need a creamy and soft cheese, as it is commercially available, and you can replace the raisins with chocolate or cranberries or other dried fruits, if you wish.
For this amount of ingredients for Easter without a countertop you will need a 28 cm tray that you line with baking paper and a little semolina butter on the sides.
Turn on the Beko stove oven at 160 degrees Celsius to warm up and help bake.
You will pass the cheese very well, possibly using a vertical blender or a sieve and spatula, so that it has a creamy consistency, so that the dough with cheese without dough is airy, fluffy and tasty.
In a separate bowl, separate the egg whites from the yolks, finally adding them to the cheese composition. In this you add the melted butter, vanilla essence, sugar and salt and mix them well, to homogenize, using a wire or a spatula.
In this composition you also introduce at this moment the semolina, sifted flour and powdered milk (if you want to add it), and can incorporate melted or finely chopped chocolate, if you decide to add this ingredient to make a chocolate pastry without dough.
Then add the raisins and baking powder to the mixture and continue to mix to incorporate them.
In another bowl, beat the egg whites well with a pinch of salt and add them, in three steps, to the cheese composition and continue to mix using a spatula, from top to bottom, slowly, to incorporate and keep the aerated appearance of dough.
You can pour the whole composition in the tray, then shake it a little, to place it fairly.
Put the tray in the preheated oven for an hour, at a temperature of 160 degrees, checking from time to time and when the top starts to brown, you can put a piece of aluminum foil on top and underneath, so as not to burn.
When the Easter is ready without a countertop, take it out of the oven and let it cool in the pan, after which you can take it out of the form and cut it. You can also decorate it with powdered sugar on top or with sauces or jams, according to taste.
