eggplant cake with coconut flour recipe

What do you do when you collect too many egg whites in the freezer? Or cake or meringue .
I would have liked to make meringues, but for some reason I didn't want the foam to be as mottled as I would have liked. Then I decided to make this cake recipe . I would have liked to glaze it in chocolate, but it was so good and fragrant that I said I keep the chocolate for another recipe :)))

Ingredients:

  • 300 g egg white
  • 150 g sugar
  • 100 g butter
  • 1 baking powder
  • 200 g flour
  • 50 g coconut
  • vanilla essence

Preparation of the egg white cake with coconut:

Whisk the egg whites with a pinch of salt. Add the sugar and mix until the foam becomes shiny and makes cakes. We melt the melted and cooled butter lightly in the egg white foam, together with the vanilla essence. At the end we incorporate flour mixed with baking powder and coconut.

The obtained composition is poured into a cake pan greased with butter and lined with flour. Bake on medium heat until nicely browned on top. When it's ready, the cake will crack, but for safety do the toothpick test.

Remove to a grill, leave to cool, then powder with sugar and portion.

Tasty and delicious as a side dish to children's milk cup or parents' coffee cup. :)))
