The best zacusca I've ever been able to make… :)))
|Eggplant zacusca with peppers|
* 5 gogosari
* 2 capsicums
* 3 eggplants
* 3 tomatoes
* 2 onions
Seeing so many hardworking girls, with all sorts of zacusca recipes, I felt like it. Of a portion of zacusca , not of work and of gathering in the pantry. :))
Bake peppers, donuts, eggplant and tomatoes, then peel and seeds. Cut the peppers and donuts into small cubes, chop the eggplant and mash the tomatoes.
Peel the onion and cut it into small pieces, then put it in a pan with a little oil, simmer it. After it has softened, mix it with the other ingredients and let it boil over low heat until all the juice decreases, and the composition thickens, at which point we adjust the taste of salt.
For preservation, put hot zacusca in jars heated in the oven, staple and sterilize for about 30 minutes in a water bath. Leave the jars in the bowl with water until they cool.
Zacusca is kept cold.
