A simple recipe, very simple… No meat, tasty and aromatic and if I think about it, it seems to have that… and a slight holiday scent. :))))
Ingredients for eggplant souffle au gratin:
~ 200 g fresh mozzarella
1 egg tied
2 cloves garlic
2 basil leaves
salt and pepper
hot pepper flakes
1 tablespoon breadcrumbs for wallpaper form
We peel the eggplant and cut it into slices. Sprinkle with a little salt and set aside until we prepare the mozzarella.
We grate the mozzarella. A bit difficult to grind fresh mozzarella, but it slowly settles. :))
Add the egg, salt and pepper to taste, crushed garlic and chopped basil. Homogenize.
In a heat-resistant dish well greased with oil and lined with breadcrumbs, place the eggplant slices. Season to taste. Put the mozzarella mixture on top
and bake on medium heat for about 30 minutes, until the mozzarella layer melts and browns.
Serve as such or with tomatoes and garlic sauce.
