The other day at a meeting between friends, word for word, about the weather, about children, schools and school programs :)) we got to discuss (inevitably!: D) and about food recipes. I raised an eyebrow at the question "have you ever laid eggs on tomatoes?" , but as the recipe was "told" to me, I could feel myself salivating with lust and I couldn't wait to get home to do it myself.
It is not a food that you can present (too) nicely on the plate, it is a simple food, but very very good. That is why I show you, so do you 😉
- 1 large onion
- 1-2 peppers
- 4-5 large tomatoes
- 1 head of garlic (or less, to taste)
- salt and pepper
- green basil
- 4 eggs
Preparation Eggs on tomatoes:
We burn the tomatoes, clean them of the skin and pass them.
Finely chopped onion, lightly fry in a few tablespoons of oil. Then add the mashed tomatoes and chopped kapia pepper. Boil the sauce until it reaches the desired consistency, stirring occasionally. Near the end, season to taste with salt, pepper, garlic passed through the press, basil and oregano.
When we consider that our sauce is ready, we put an egg from place to place and cover with a lid. Simmer for a few minutes, without stirring, until the eggs are ready.
The food is served hot, with the addition of pasta cooked in salted water or with polenta. Each according to preference. 😉
