Eggs with chorizo and baked kapia in the oven

Whether you serve them for breakfast, lunch or dinner, these eggs are great! At least, in our house they are very appreciated and devoured as soon as they are finished cooking! They are made so easy and go great with some warm bread, prepared at home! Let’s do them for your loved ones!

 

Ingredients:

  • 100 gr chorizo
  • 1/2 yellow pepper
  • 1/2 green pepper
  • 1/2 red pepper
  • 2 capsicum peppers
  • 1 teaspoon hot sauce (or hot pepper jam)
  • 4 eggs
  • 150 gr mozzarella
  • salt
  • pepper
  • paprika
Method of preparation:
Yellow, green and red peppers, clean the seeds, cut them into cubes.
Cut chorizo into thin slices.
Put a pan on the fire, brown the chorizo on both sides.
Add the pepper cubes, sprinkle with salt, pepper and a little paprika.
Saute for 2-3 minutes, add 3-4 tablespoons of water if needed.
Bake the kapia peppers, clean them of seeds and stalks, chop them.
Add them to the pan.
Now add the hot sauce.
Leave on the fire for another 1-2 minutes.

Prepare two small ceramic pots (or one large one).
Mozzarella or cut into cubes.
Pour the chorizo mixture into the two bowls evenly.
Sprinkle a few cubes of mozzarella, then make a little space with a spoon and break two in each bowl.
Sprinkle with the rest of the mozzarella.

Don’t forget to add salt to the eggs.
Put the dishes in the hot oven, at 180 degrees, for 10-12 minutes, until the eggs are cooked.
Take them out of the oven, let them cool for 2 minutes and serve!
