1 chicken breast
1 red onion
1 bell pepper
2 tablespoons olive oil
salt and pepper
paprika and rosemary
For 4 tortilla sheets we need:
200 g flour
100 ml water
1/2 teaspoon salt
1 teaspoon oil
We cut the chicken breast into strips and season it.
Cut the onion and pepper into strips, and the eggplant and zucchini into slices. Season with salt and pepper. Sprinkle with olive oil.
Fry the meat on the hot grill, on both sides.
On the same grill in which we fried the meat, we put the vegetables and fry, stirring from time to time until the vegetables are ready, but not very soft.
Meanwhile, we prepare the tortilla sheets.
In a bowl put flour and salt, then pour warm water a little until it binds and get an elastic dough that does not stick to your hands. Add the oil and knead until well incorporated.
Divide the dough obtained into 4 equal parts, which we spread with the rolling pin in a thin round sheet.
Bake in a Teflon pan, without oil, over high heat. It bakes very quickly.
Keep warm until ready to serve.
Grilled vegetables, boiled corn kernels and strips of meat are placed on each sheet.
Serve with sour cream sauce, with Guacamole sauce or simple.
