Ingredient:

  • 200 g flour
  • 100 g sugar
  • 100 g chopped walnuts
  • 4 well ripened bananas
  • 60 ml oil
  • 1 teaspoon baking powder
  • Half a teaspoon of baking soda
  • Vanilla essence
  • A pinch of salt

 

The fasting banana cake resembles to some extent a classic banana cake or that famous banana bread, replacing eggs and yogurt to suit fasting periods. At the same time, it is a vegan product, because no ingredients of animal origin are used, so it can serve different purposes and types of sweets. And if you remove walnuts from the equation, you also tick and possible allergenic risks, resulting in a simple, slightly sweet dessert, which can be combined with different drinks and jams.

Such a recipe is simple, needing in the kitchen a tel or a mixer, a spatula, a baking tray and two bowls. You can also use, above the counter, if you want, almond, coconut or walnut flakes, for example, for a crispier texture and a more special taste of this dessert with fasting bananas that can be served in the summer months, and in winter, especially if you add a little cinnamon.

You will start by turning the oven to 180 degrees Celsius, so that it heats up on the inside and helps to bake the bread.

You will take out a clean cake tray and you will cover it with baking paper.

In a larger bowl, mix the flour with the sugar, baking soda, baking powder, salt and walnuts, making sure you have a homogeneous product, so that the cake dough with fasting bananas grows in the same way on all sides.

In another bowl, grind the bananas well, put the oil and vanilla essence on top of them and mix very well.

Over the wet ingredients you will put the dry ones, little by little, using a whisk or a mixer, to finish faster, or a spatula, to mix without lumps.

The whole composition of fasting cake with bananas is poured into the tray lined with baking paper and can be baked for 50 minutes in a built- in oven on preheated gas, keeping the heat at 180 degrees Celsius. After 30 minutes it can be useful to check if the cake has browned and test with a toothpick to make sure that the inside is almost ready. If the dough sticks to the piece of wood, then it must be left to bake and if it comes out clean, the dough is penetrated and cooked.

For people who want a vegan diet cake you can make banana bread without sugar, replacing it with a little honey or agave syrup or maple or with pieces of baked banana that you put on top after you have finished making the dough, before put in the oven.

Returning to the preparation, when the cake is ready, turn off the heat and leave it in the pan for at least another 10 minutes, to cool down, then take it out on a grill to cool completely. You can powder it with a little sugar, if you want. Then, you can slice the fresh cake with fasting bananas and you can serve it simply or with a hot or cold drink.
