My captives are not lovers of spinach. And as it hurts my heart to leave it in the market when I know how good it is, I turned the problem on all sides, I thought and changed my mind and here I am at the end of these pasta with spinach and tomatoes.

They were a bit skeptical at first, but in the end they accepted them and really liked them. :)) If you also have your whims, this is the ideal trick. :)))

And since some of you asked me for fasting recipes, I made them without an egg, so that we could reconcile everyone. :))

For pasta with spinach:

1 spinach link
2 tablespoons extra virgin olive oil
White flour
1 teaspoon salt

Bring a little salted water to a boil. When it boils, put the spinach leaves and bring it to a boil until it softens. Pour into a sieve and let drain and cool.

Pass the spinach leaves with a fork, add the olive oil, salt and then the flour, until you get an elastic and non-sticky dough.

For stretching and cutting I used the pasta machine. If you do not have a machine, spread the dough on the floured table, in a thin sheet. Roll, then cut into strips with a sharp knife.

The pasta is then spread on the floured table and left to dry a little.

For pasta with tomatoes:

1/2 can of red juice
1 teaspoon salt
2 tablespoons extra virgin olive oil
White flour

We pass the tomatoes. Mix in a bowl the pasta obtained with salt and olive oil, then add enough flour to obtain an elastic and non-sticky dough.

For cutting, proceed just like with spinach pasta.

Boil the pasta in salted water for no more than 2-3 minutes. Drain the water and pass under a stream of cold water.

You can serve them with whatever you like. I used vegetables.

For the gasket:

green beans beans
corn grains
garlic
salt and pepper

Beans and corn kernels are boiled in salted water, then put in a strainer.

Heat a few tablespoons of olive oil in a pan, then add the vegetables and "stir" for a few minutes. Add the crushed garlic, salt and pepper to taste.

Mix the pasta and vegetables in a bowl and the meal is ready. 🙂
