For the dough:

  • 500 gr flour
  • 320 ml of mineral water
  • 1 sachet of dry yeast (7 gr)
  • 2 tablespoons raw sugar
  • 20 ml melted coconut oil
  • 15 ml of sunflower oil
  • vanilla essence
  • orange essence
  • a pinch of salt
For the filling:
  • 700 gr peeled pumpkin
  • 1 teaspoon coconut oil
  • 3 tablespoons quince jam with pears
  • 2 tablespoons raw sugar
  • 1 teaspoon cinnamon
Method of preparation:
Start with the filling , so that it has time to cool.
Put the pumpkin on the large grater.
Put the coconut oil, pumpkin, jam, sugar and cinnamon in a saucepan.
Put the pan on the fire, mix on the right heat until the filling is low and has no liquid.
Set it aside and let the filling cool.
Sift the flour into a bowl.
Add the yeast, sugar and a pinch of salt.
Heat the mineral water a little, so that it is warm.
Gradually incorporate it over the flour, start and knead.
Add vanilla and orange essence.
Pour a little melted coconut oil and knead.
At the end, incorporate the sunflower oil.
You will get a homogeneous dough, but slightly sticky.
Cover it with a clean cloth, leave it to rise in a warm place until it doubles in volume.

Sprinkle the flour on the work table, turn the leavened dough over and divide it into 12 pieces.
Take each piece separately, spread it, but not too thin, put a spoon full of filling in the middle.
Form the pies and place them on a tray, on baking paper.
Turn on the oven, set it to 180 degrees and let it heat up for 10 minutes.
Insert the pies for about 30 minutes, until browned.
When they are ready, take them out of the oven.

You can powder them with sugar, you can grease them with a syrup, as you wish.
Serve hot.
If you still have pies, while they are hot, put them in a bowl and wrap them in cling film so that they do not harden.
