A simple recipe, ideal for fasting days or when you are in a time crisis. Like me! :))))
- For 2 servings:
- 3/4 cup tricolor rice (long grain rice, wild red rice and whole red rice, in variable proportions)
- 1 cup peas
- 1/2 red pepper
- 1 onion
- a few mushrooms
- olive oil
- salt and pepper
Preparation Rice with vegetables:
Boil the rice in salted water for about 20 minutes, until the rice softens. Then put it in a strainer to drain the water well.
In a pan in which I heated 2-3 tablespoons of olive oil, lightly fry the finely chopped onion. Then add the peas, diced peppers and sliced mushrooms. Add a little water and stirring constantly, keep it on the fire until the vegetables soften. At the end, add the rice, salt and pepper to taste and set aside.
- For the days when you are not fasting, you can add 2-3 tablespoons of grated Parmesan cheese, it will be absolutely delicious.
Serve hot. Good appetite! 🙂
