My dwarfs are lovers of meat recipes. No matter how hard I try to put their vegetables on the menu, the meat is also better 😀 And then, in order to be both mine and theirs, I make various combinations with which to arouse their culinary enthusiasm.
I found the idea for this pie on a Turkish site (well, it was presented there as pizza) and I really liked it. I immediately thought that the middle would be theirs, and the edges of mine :)))) I only had cottage cheese and some cheese in the fridge at that time, but it would be very nice for each ball of dough to be filled with something else, so that everyone has a surprise. Culinary and, obviously, pleasant! 😀
- For the dough:
- 200 ml of milk
- 50 ml water
- 2 tablespoons oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 7 g dry yeast
- ~ 500 g flour
- For meat filling:
- ~ 300 g turkey breast
- some Champignon mushrooms
- 1 onion
- 400 ml tomato juice
- 1 clove of garlic
- 2 tablespoons grated Parmesan cheese
- salt and pepper
- parsley and basil
- For the cheese filling:
- ~ 300 g of cottage cheese
- 1 or
- 1 tablespoon sour cream
- salt and pepper
- a few spinach leaves
- For finishing:
- 1 yolk
- 2-3 tablespoons milk
- ~ 50 g grated cheese
Preparation Flower-pie with meat and cheese:
Put the flour in a bowl and mix it with the sugar, salt and dry yeast. Mix the warm milk with the oil and water, then slowly pour over the flour. Knead a homogeneous and non-sticky dough. Depending on the type of flour used, add more milk if necessary if the dough is too thick or a little flour if the dough is soft and sticky. Cover with a clean towel and leave to rise in a warm place until it doubles in volume.
- The dough can also be prepared in a bread machine.
Finely chop the onion in a few tablespoons of oil. When it has softened, add the tomato juice and let it simmer until it starts to boil. Then add the turkey breast and chopped mushrooms and mix until the meat turns white and melts. Let it simmer until all the juice is removed from the pan. Salt and pepper to taste, add crushed garlic and chopped greens. Set aside and let cool.
- You can add an egg to the cooled composition if you want a more "bound" composition.
Put the cottage cheese in a bowl and mix it with the egg and sour cream. Mix well to obtain a creamy composition. Salt and pepper to taste, then add the chopped spinach.
We turn the raised dough on the table greased with a little oil. About 1/4 of the dough we spread it in a thin sheet of about 0.5 cm thick, the size of the tray in which we will bake the pie. I spread it directly on the baking paper. Sprinkle with grated cheese.
We rest the rest of the dough in pieces approximately equal in size that we will shape in the form of balls. We flatten each ball of dough with our palms, we put a spoonful of cheese, then we close it forming a ball, sticking the edges well.
We place each ball on the edge of the round sheet, thus forming a border. Fill the middle with the meat composition, then sprinkle with Parmesan.
Leave the tray in a warm place for a few minutes, grease with beaten egg yolk with a little milk, sprinkle with flax seeds and put in the oven over medium heat for about 1 hour, until the pie is nicely browned.
Serve hot with garlic sauce with sour cream and dill.
