I don't know exactly where the idea for this pie came from… or stuffed breads… I saw that it went around the blogosphere 😀 I have been "dreaming" of it in various combinations, both sweet and salty, since I saw it praised and applauded by my dear girls on bucataras.ro 😉
It's a great way to assemble flour, and the end result deserves all the attention, especially if you have a festive meal or some friends invited to dinner. Today I will show you the meat version, a version that can be served hot as a main course or cold as an appetizer. Soon I will show you a sweet version that is over in no time.
- For the dough:
- 200 ml of milk
- 50 ml water
- 2 tablespoons oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 7 g dry yeast
- ~ 500 g flour
- For the filling:
- ~ 300 g turkey breast
- a few brown mushrooms
- 1 onion
- 400 ml tomato juice (made by me, to brag 😀)
- 1 clove of garlic
- 2-3 tablespoons grated Parmesan cheese
- salt and pepper
- parsley and basil
- For finishing:
- 1 yolk
- 2-3 tablespoons milk
- flax and sesame seeds
Preparation Meat-flower pie:
Put the flour in a bowl and mix it with the sugar, salt and dry yeast. Mix the warm milk with the oil and water, then slowly pour over the flour. Knead a homogeneous and non-sticky dough. Depending on the type of flour used, add more milk if necessary if the dough is too thick or a little flour if the dough is soft and sticky. Cover with a clean towel and leave to rise in a warm place until it doubles in volume.
- The dough can also be prepared in a bread machine.
Finely chop the onion in a few tablespoons of oil. When it has softened, add the tomato juice and let it simmer until it starts to boil. Then add the turkey breast and chopped mushrooms and mix until the meat turns white and melts. Let it simmer until all the juice is removed from the pan. Salt and pepper to taste, add crushed garlic and chopped greens. Set aside and let cool.
- If you want a more "related" composition, which is also indicated, you can add an egg to the cooled composition.
We turn the raised dough on a lightly floured table and divide it into 2 parts that we will spread with the rolling pin in sheets of about 0.5 cm thick. We put one of the sheets in the large stove tray, lined with baking paper. Spread the filling on the entire surface of the dough, sprinkle with Parmesan, then cover with the second part of the dough and press the edges well.
- Here the filling should have been distributed only in the middle and on the edge of the dough. I chose the easiest option :))
Using a bowl, draw the middle of the pie, then with a sharp knife cut the dough into rays, starting from the middle circle. We then take each ray separately and twist it, as many times as the dough and the filling allow us.
Grease the pie with the yolk spread in a few tablespoons of milk and sprinkle with flax and sesame seeds. Leave the tray in a warm place until the dough rises a little. Bake on medium heat for about an hour, until the pie is nicely browned on top.
Serve hot with garlic sauce with yogurt or cold as an appetizer.
