The fluffy cake with sweet cheese and orange flavor appeared as a result of my dwarf’s desire.
David often asked me to buy them a pastry cake from a pastry shop in our area. All good and beautiful, I just said I can prepare it at home. You know, what doesn’t a mother do for her baby?
Having country eggs, natural cottage cheese, I said that this is the opportunity to prepare this fluffy cake with sweet cheese and orange flavor.
The top grew very nicely, of an intense yellow, and the orange aroma declared it better than the cake from the corner store. Shall I tell you that my heart has grown in joy? That’s what happened :)))
Below you will find the simple recipe for this fluffy cake with sweet cheese and orange flavor.

- 6 chicken eggs
- a pinch of salt
- 6 lg sugar
- 6 lg flour
- 3 lg oil (sunflower)
- 100 g of cottage cheese
- 100 gr ricotta
- 1/2 lgta dry orange peel
- 2 lg sugar
- 1 or
- powdered sugar
The thing is relatively simple, not to say very simple.
Preheat the oven to 170 degrees C.
The homemade cow’s cheese, not being creamy, I chose to froth it with ricotta. You can use cream cheese or you can prepare it at home, as you like.
In the cheese composition, add sugar, an egg, orange peel and mix. Cool the cheese composition, during which time the top is prepared. Separate the egg whites from the yolks. Sprinkle the yolks with a pinch of salt. The egg whites (with a pinch of salt) mix well until they become consistent and turn white. Gradually add the sugar (here I make a parenthesis and tell you that I only used 4 lg of sugar instead of 6, but that’s because I reduce the amounts of sugar where possible). However, in the end, it can be powdered with sugar.
When the egg whites become dense and a firm meringue is obtained, add the yolks. The sifted flour follows, it is homogenized, and at the end the oil is incorporated.
Prepare a baking form (I used a 20 x 20 cm square), provided with baking paper.
Pour half of the dough. Distribute a few tablespoons of the cheese composition, then pour the rest of the dough. Level nicely and put in the oven, baking, for 30 minutes.
When it turns brown and smells nice, it is a sign that it is ripe, but you can try it with a toothpick / skewer stick. If it comes out clean, it means it’s a good thing and can be taken out of the oven.
Leave to cool, only then portion. Powder with vanilla sugar and enjoy with gusto, along with a tea, a cup of milk or even a cup of compote.
