Today I brought you a fluffy blueberry cake, a simple and fragrant cake that goes with any fruit you like or have at your disposal. An ideal cake for when you have some fruits that no one wants anymore, perfect for those who love fruit cakes in general.
fluffy lemon blueberry cake
- 3 eggs
- 200 gr sugar
- 100 ml oil
- 300 gr flour
- 150 ml of milk
- 10 g baking powder
- grated lemon peel
- vanilla essence
Preparation instructions for Fluffy blueberry cake:
Eggs are mixed with a pinch of salt until they turn white and double in volume. Add the sugar, vanilla essence and lemon peel and continue mixing until they become like a cream. Then add the oil and gradually, the flour mixed with baking powder, alternating with cold milk.
At the end, incorporate the washed and dried blueberries, mixing lightly with a spatula, so that they do not crumble.

Pour the composition into a tray (20/25 cm) lined with baking paper. Bake on medium heat (180 degrees or 160 degrees electric oven with ventilation) for about 40 minutes, until the cake is nicely browned on the surface and passes the toothpick test.
Remove to a grill and leave to cool, then portion.
