I still have some jam left from the last cheesecake and I kept thinking about what to do with it. I remembered the fluffy nests with oranges , Laura Laurentiu's recipe , and I decided that the coconut filling will be replaced with jam.
Fluffy, tasty, flavorful… only good for breakfast or even dinner, with a tea or a cup of milk.
- For the dough:
- 200 ml of milk
- 1 or
- 50 g butter
- 75 g old
- 7 g dry yeast
- ~ 500 g flour
- candied orange peel
- For the filling:
- blueberry jam
- For syrup:
- 50 ml milk
- 1 tablespoon sugar
- 1 tablespoon honey
- 1 tablespoon coconut
- vanilla essence
Preparation Fluffy nests with blueberry jam:
Mix the yeast with 1 tablespoon of sugar, then dissolve in a little warm milk. Put the flour in a bowl, make a hole in the middle and pour the yeast mixture.
Separately beat the egg with a little salt, then the rest of the milk, the rest of the sugar and the orange peel. Pour this mixture over the puffed yeast, then start kneading the dough.
After all the ingredients have been incorporated, pour the melted butter little by little and knead until you get a smooth and non-sticky dough. Cover the bowl with a towel and leave to rise in a warm place until it doubles in volume.
- If necessary, add a few tablespoons of flour.
- The bread machine can be used for kneading.
We turn the raised dough on the table greased with oil and divide it into 12 balls, approximately equal. Each ball of dough is flattened, then in the middle of each one put a spoonful of jam. The edges are raised, tightened and glued together, forming a ball. We place them, with the closure underneath, in the tray (25/35 cm) well greased with oil. Leave to rise for about 20 minutes, grease with an egg yolk dissolved with a little milk. Put the tray in the oven over medium heat for 20 minutes, until it starts to brown. Remove the tray and pour over the syrup we have prepared in the meantime
Boil the milk in which I put the sugar, honey and coconut. Set aside and flavor with vanilla.
After pouring the syrup over the nests, put the tray back in the oven until browned and the syrup is well absorbed.
