Fluffy pancakes with cheese and honey

* 150 g of cottage cheese
* 50 g butter
* 2 eggs
* 2 tablespoons honey (70 g)
* 250 ml milk
* 2 dogs flour (280 g)
* 1 baking powder
* vanilla essence

The cheese is mixed with honey until it becomes like a cream. Add the soft butter at room temperature, then the eggs one at a time, mixing well after each one. Pour the milk lightly, vanilla essence, then incorporate the flour mixed with baking powder and a pinch of salt. You will get a dough a little thicker than the pancakes.

In a Teflon pan, greased with a little oil, put a spoonful of the composition. Bake until bubbles appear on the surface of the pancake, then with a spatula turn with a firm motion on the other side.

Serve hot, sprinkled with honey.
