I can't say I'm a Gordon Ramsay fan, but for some time now I've been discovering some of his master's recipes that I have to try. One of these was this focaccia recipe with tomatoes and rosemary. An irresistible fluff, which smells crazy. We can't wait to stick the knife in the crisp red crust!

  • For the dough:
  • 2 cups of flour
  • 2-3 tablespoons flour for kneading
  • 2 tablespoons olive oil
  • 2 tablespoons gray
  • 1/2 teaspoon salt
  • 1 teaspoon dried yeast
  • ~ 1 cup warm water
  • Furthermore:
  • cherry tomatoes or dried tomatoes
  • green rosemary
  • 2 tablespoons olive oil
  • hot pepper flakes

Preparation of Focaccia with tomatoes and rosemary:

It took:

Put the flour in a bowl and mix it with salt, semolina and dry yeast. We make a hole in the middle and pour warm water mixed with oil. Mix lightly by hand and add warm water if necessary, just enough to get a soft and sticky dough.

The moment we take the dough in our hand and let it fall, it will stretch and break, this is about the consistency. 😉

Pour the dough on the floured table and knead the dough by folding. We don't knead very much, just enough to get a homogeneous dough. Put the dough back in the bowl, cover with cling film and let it rise until it doubles in volume.

Grease a 20/30 cm tray well with oil, sprinkle a little salt and turn the dough over without kneading it. Spread the dough well on the entire surface of the tray and let it rest for 10 minutes. Pour the oil over the dough, then spread it well with your fingertips, at the same time pressing the dough, making small depressions. We put the tomatoes from place to place, the rosemary leaves, salt and hot pepper flakes.

Put the tray in the oven over medium heat for about 30 minutes, until lightly browned and the crust becomes crispy.

Serve hot or cold, as desired.
