Here that today I bring you a salad of raw vegetables with quinoa , a good recipe for those who avoid sitting too much next to the stove.

I think everyone knows how to make a salad of vegetables, it's not a big deal… but have you thought of combining it with quinoa , these magical and so delicious beans? I say try it, you won't be sorry.

Ingredients:

  • 1/2 cup quinoa
  • 1 small red beet
  • 1 small celery root
  • 1 large carrot
  • lemon juice
  • olive oil
  • salt and pepper
  • green parsley

Preparation Quinoa salad:

Put the quinoa in a strainer and wash it well under running cold water, then boil it in salted water for about 20 minutes. After boiling, put it in a strainer and let it drain well.

Grate beets, celery and carrots. The quantities of vegetables used may vary according to your preference. 😉

Put quinoa in a bowl and mix lightly with the grated roots. We will then add some green parsley leaves, salt and pepper to taste. At the end we prepare a mixture of olive oil and lemon juice to taste, a mixture that we will pour over the salad.

Very easy to prepare and absolutely delicious!
