Fried rice – traditional Asian recipe
- 200 g of rice
- 2 eggs
- 150 g white cabbage
- Half red bell peppers

A fried rice with vegetables and egg becomes an interesting garnish for different dishes, and can be eaten easily, if you need a dish that is easy to make at any time of the day or night. It is part of Cantonese cuisine, and may also be called Yangzhou fried rice, replacing, to some extent, bread, to which vegetables and a source of protein are added, in this case egg.
The recipe for rice with vegetables and egg uses boiled rice a few hours before, maybe even from the day before, to catch better when frying. It is recommended to never use olive oil when making such a preparation, because it can damage the taste (Chinese cuisine does not use this type of oil).
How to make rice with vegetables and egg? The first step for this fried egg with rice is to boil the rice in double the amount of water (400 ml of water), and you can also use a rice cooker if you have one at hand. At the stove you will leave the fire low, putting a lid over the pot. When it is ready, rinse it in cold water and let it cool well.
Meanwhile, prepare eggs for Chinese rice by beating and frying them in a simple omelette. When it cools, cut this egg into small pieces. You can also use it to fry it by mixing it in the pan, in order to break into small pieces the golden pieces that you put later in the rice recipe.
Cut into thin strips cabbage, peppers, carrots and onions for rice with vegetables, simple recipe. In a deeper pan or in a wok, heat the oil very well and add the onion, ginger and pepper, tempering them well with the carrot, then put the corn, cabbage and peas and leave them for a minute, to prepare them thermally for the rice. You can also use a slightly different way to prepare a rice with egg and vegetables in a wok, first heating the vegetables, then take them out of the pan and fry the eggs, stirring them continuously, so as not to get caught, when they are prepared by adding rice with soy sauce, frying for a minute. Reinsert the hardened vegetables and mix, leaving the preparation on the fire for another minute.
In the end, all you have to do is take a portion of rice with vegetables and egg from the pan and serve it plain or with your favorite source of protein.
