Fruit cake with coconut flavor

Ingredients:

  • 4 yolks
  • 2 sachets of coconut pudding
  • 700 ml of milk
  • 5 tablespoons sugar

  • 15 gr butter
  • 15 gr gelatin + 2-3 tablespoons milk
  • 500 ml liquid cream
  • 1 compote of yellow cherries
  • 1 cubed pineapple compote
  • 1 tangerine compote
  • stars for decoration

Method of preparation:

We are preparing the countertop. Separate the eggs. Mix the egg whites with the salt until it starts to rise, then add the sugar and continue mixing until it reaches the consistency of a thick cream. Add the yolks, mix, then sift the flour mixed with baking powder. Mix lightly with a spatula, then pour the composition. in a cake tin lined with baking paper.
Shape in a preheated oven at 180 degrees until lightly browned (pass the toothpick test).
Remove the form and let it cool, then cut the top into 3 parts horizontally.

Drain the compote. If the cherries have seeds, we remove them, keeping the cherries whole.
Cut the tangerine slices in half and possibly the pineapple cubes if they are very large.
  We syrup the cake slices with the mixed compote syrup.
Prepare the cream. In a double-bottomed saucepan put the yolks, sugar and salt and mix well.
    Put the pudding powder and start pouring a little milk, stirring constantly. Put the pan on the fire and stir until the composition thickens, without boiling.
We take it down and put the butter. Stir vigorously to incorporate, then add hydrated gelatin in cold milk. Homogenize and give cold cream. Be careful not to harden too much.
   Meanwhile, beat the whipped cream.
We stop one part for garnish, and we mix the rest of the whipped cream with the cooled cream.
We mount the cake on the tray that we will serve. We use the ring of the shape in which we baked the top.
Put the first slice of cake, syrup it with 1/3 of the syrup or according to preference and put 1/3 of the cream. Place half of the fruit, then put the second slice.

The last layer will be cream, then put the tray in the refrigerator for at least 1 hour.

Remove the ring carefully, then decorate the edges with the whipped cream. We decorate on top according to preference. I chose white stars.
