Traditional Coliva Recipe
- 300 g arpacas

Barley cage is a dish that is not missing from the table in case of a memorial or a memorial, being specific to the traditions of the Orthodox rite, the basic recipe being an ancient one, consisting of wheat boiled with honey, which took the place of offering to the gods. Boiled barley recipes are easier to make, because the cooking time is much shorter compared to boiled wheat. The result will be a tasty, aromatic and good-looking dish.
How to prepare a fasting cage quickly? Using barley, which will boil much sooner than a wheat cage. For the preparation to be done correctly, the grains should be open, ie "flowering" or cracked.
The barley will be washed in two waters or until it remains clear when it is passed through water, then it is put in a pan with a liter of water and boiled over medium heat, during cooking seasoning with a little salt. As the foam forms on the surface, it moves away, reducing the fire to a minimum so that this classic recipe cage has a good taste. Stir occasionally so as not to stick to the bottom of the pan.
When the wheat is put in the recipe of the walnut cage, it must be washed well, until it is cleaned, after which it can be left to swell in water overnight, needing at least an hour of boiling and crushing through the meat machine before to acquire the necessary texture for the respective preparation.
The barley is cooked over low heat on the stove for up to 45 minutes, until all the liquid is absorbed. The next step for the fast food cage is to add the sugar, which should melt quickly, making sure to mix it. Boil it for about 3 minutes and let it cool for at least 3 hours, during which time the grains will absorb the rest of the water. We mention that this is the recipe for fasting products for alms, and can make a barley with milk, for a slightly richer taste.
The boiled barley is placed in a larger bowl, next to which the grated peel of a lemon, ground and sliced walnuts, raisins and vanilla are placed, and the cage composition is mixed very well with the walnut. If you want it to have a darker color, you can also incorporate a few tablespoons of cocoa. Place the composition on a flat plate and shape into a cake.
For decoration, the cage will first receive a blanket of ground walnuts or a thin layer of cocoa, after which you can make a candy frame and a cross in the middle (you can make them from candies, chocolate, cocoa, etc.). The cross can be made with a paper template that you cut out, put it on top of the barley cake and position it in the middle, sprinkling some cocoa, for example. Some people prefer to slice wheat or barley cage into glasses and put candy or chocolate or coconut on top.
