Our source of cheese is inexhaustible and every week we have fresh and good cheese at the table. But most of all, the children are happy if I make them a cake with cheese or papanasi and I know for sure that they don't fail with the dessert of that day :))

The dough I used is from the apple cake , I really like that it is made quickly and it is very good.

Ingredients:

  • For sheets:
  • 2 eggs
  • 10 tablespoons sugar
  • 10 tablespoons milk
  • 10 tablespoons oil
  • 1 baking powder
  • candied lemon peel
  • 500-600 g flour
  • For the filling:
  • ~ 700 g of cottage cheese
  • 2 eggs
  • sugar to taste
  • candied lemon peel
  • 1 tablespoon semolina for sprinkling on the dough sheet

In a bowl, mix eggs with a pinch of salt until they double in volume. Add the sugar and lemon peel, then mix until you get a creamy composition. Pour the oil and milk in turn and mix lightly. Then add the flour and knead a homogeneous dough that does not stick to your hands.

  • Depending on the type of flour, it may need less than I used. Start at 500 grams and add more if necessary.

Filling:

In a bowl mix the cottage cheese with eggs, sugar and candied lemon peel. Mix well until you get a homogeneous composition.

  • Depending on how dry the cheese is, you can add another egg or a tablespoon of sour cream

On the floured table, spread 2/3 of the dough in a thin sheet. We extend to the size of the stove tray (the one from the standard equipment). Put the sheet of dough in the tray lined with baking paper, sprinkle with semolina and place the cream cheese evenly on top.

We spread the rest of the dough in a thin sheet, then we cut narrow strips. We place the strips on top of the grated cream cheese.

  • I tried to make this cake the same as the one with apples, from 2 sheets, but the sheet on top swells too much and even if the cake is good it is not very good looking

Put the pan in the oven over medium heat until the cake is lightly browned on top. Leave to cool in the pan, then portion.
