Method of preparation:
Mix the osanza in a bowl with 450 gr of flour and divide it into 4 equal parts.
Sift the rest of the flour into a bowl. In the middle we make a hole in which we put eggs, salt, oil, vinegar and white wine. Knead well an elastic, non-sticky dough.
Spread the dough on a floured countertop in the form of a larger rectangle. Grease the dough with a piece of osanza. Divide the imaginary rectangle into 3 parts vertically. little.
Bring the left edge to the middle, then the right one. Cover the dough with plastic wrap and let it cool for half an hour.
We repeat the operation 3 more times, until we finish the osanza doing the same and keeping the dough formed cold for half an hour.
We can keep the dough in the fridge until the next day, it is really recommended.
The next day we spread the dough a little with the rolling pin and divide it in two halves.
We work the first half keeping the second one cold during this time.
The room does not have to be very hot.
Knead the first half of the dough into a thin sheet. Cut the dough into squares with a sharp knife. In the middle of each square we put jam according to preference. It is preferable for the jam to be a little harder so that it does not flow.
We bring one side over the other forming rectangles.
We place the jokes in the tray.
Place the pan in the preheated oven at 190 degrees for about 20 minutes until lightly browned.
Remove the tray and let them cool a bit.
Roll the funny ones with powdered sugar while they are warm to catch well.
Do the same with the dough kept cold.
