  • * Rock:
  • * 5 eggs
  • * 150 g sugar
  • * 1/2 cana faina
  • * 30 g cocoa
  • * 200 g walnuts
  • * 50 g butter
  • * 1 teaspoon baking powder
  • * free of rum
  • * For ganache cream:
  • * 250 g dark chocolate
  • * 200 ml liquid cream
  • * For whipped cream:
  • * 400 ml liquid cream
  • * 50g old
  • * 50 g nut
  • Decor:
  • * 200 ml liquid cream
  • * 100 g dark chocolate

How to prepare Iulia Cake:


Beat the eggs with sugar until they double in volume. Gradually add the ground walnuts.

Add flour mixed with cocoa and baking powder, stirring gently. Add melted and cooled butter, rum essence and mix lightly.

The dough is divided into 3 parts and bake a sheet in a tray (20/20 cm) lined with baking paper, in the oven over medium heat to high (200 degrees), until lightly browned, for 8-10 minutes ,

The sheets are left to cool on a grill and do not overlap.

Chocolate ganache cream:

In a bowl, heat the whipped cream until it boils. Add the chocolate pieces and mix well until smooth. Let it cool for a few hours. It would be preferable to prepare ganache cream the day before or in the evening for the morning.


We caramelize the sugar. After it has acquired a golden color, add the walnut broken into large pieces. Spread on a piece of baking paper and leave to cool. After it has cooled and hardened, we grind coarsely on the robot with a metal knife. Or we put it in a thick bag and beat it with a hammer.

Beat the whipped cream, then add the caramel with walnuts and mix well.

Each top is greased with a thin and uniform layer of ganache cream and another layer of caramel cream. They are superimposed and placed in the (detachable) tray in which I baked the sheets. Cover with cling film and refrigerate until the next day. Or for at least 4-5 hours.
