Rice pilaf with vegetables – a simple and delicious recipe , which can be served on fasting days or as a garnish for a steak
- 1 cup rice
- 1 onion
- 1 carrot
- 1 parsley root
- 1 piece of celery root
- fresh peas
- salt and pepper
- ~ 50 ml olive oil
Preparation of rice pilaf with vegetables:
Finely chop the onion and put the rest of the vegetables on a small grater. They can also be given on the grater with large meshes or cut into cubes, if some fussy diners don't mind this aspect :))
We put them to harden in a pan in which we put the oil, over medium heat. Stir continuously until soft, a few minutes. Add the washed rice in a few waters, mix well and let it cook together for a few more minutes. Quench everything with 3 cups of water (the same one I used to measure the rice with), salt and pepper to taste. Let it boil, on low heat, for about 20 minutes, until the rice swells. Halfway through the cooking time, add the peas.
When it is ready and after it has cooled down a bit, you can sprinkle some chopped green parsley.
