Ingredients:

  • wet rock
  • 120 gr butter
  • a pinch of salt
  • 3 eggs
  • 4 tablespoons sugar
  • 200 gr flour
  • 1 vrf baking soda
  • 150 ml of milk
  • 1 sachet of baking powder
  • 2 tablespoons black cocoa
  • coffee cream :
  • 300 gr dark chocolate
  • 100 ml espresso coffee
  • 200 gr of sour cream
  • 2 sheets of gelatin (3-4 gr)
  • mango cream
  • 2 mango fruits (well ripened)
  • 2 lg powdered sugar
  • 100 gr white chocolate
  • 200 gr of sour cream
  • 2 sheets of gelatin (3-4 gr)
  • Furthermore:
  • 150 gr chocolate
  • 30 ml milk

Preparation

Countertop ingredients should be stored at room temperature.
Mix the flour with the baking soda and cocoa.
In a bowl, froth the butter with a pinch of salt and sugar. Add one egg, mixing well until incorporated after each, then add half of the flour mixture, milk, and finally the rest of the flour.
The composition is poured into a baking form (heart) or you have, provided with baking paper. Bake in the preheated oven at 180 degrees C for 30 minutes. For more safety, you can check if it is baked with a toothpick or skewer. If it comes out clean, then the top is baked enough, if not, it must be left in the oven. Once baked, remove from the oven and leave to cool.
Separately, melt the chocolate on a steam bath, adding the coffee. Stir until smooth, then set aside to cool completely. The gelatin is hydrated in a little water, then heated. Caution: it does not boil, otherwise it loses its properties.

NOTE: When using gelatin, do not combine it with fresh pineapple, kiwi, fig or papaya fruit. These fruits have an enzyme that interacts with the properties of gelatin, canceling its coagulation effect. So use compote / canned fruit or scald them in case you use fresh fruit.

Beat the cream with the mixer until it becomes fluffy and gains consistency. Incorporate the chocolate cream with coffee little by little, then add the heated gelatin and mix gently, with movements from bottom to top so as not to lose its fluffy texture. This cream is poured evenly over the cooled cake top. (I broke it into small pieces to make the cream adhere better.) Let it cool until it coagulates.
Peel the mango, mix the pulp well with a blender. Add the sugar and transfer the composition to the heat, until it acquires a slight consistency, then set aside to cool. Separately, melt the white chocolate on a steam bath. Moisturize another two sheets of gelatin (if you wish, you can use mango compote juice), then heat. The cream is mixed until it becomes thick and fluffy. Incorporate the white chocolate, the cold mango puree, add the gelatin, stirring gently, with movements from bottom to top, so as not to spoil the fluffy texture.
Pour this cream over the chocolate layer with coffee, already coagulated, and let it cool again. To decorate this cake, melt the chocolate on a steam bath, adding a little milk. Stir until smooth, then set aside to cool.
The cake is decorated to taste, with chocolate icing. I decorated it in the shape of hearts.
Let cool until ready to serve. It is an extremely fine and delicious cake.
