* 150 ml water
* 2 tablespoons olive oil
* 1/2 teaspoon salt
* 1 teaspoon sugar
* 1 teaspoon dried yeast
* ~ 250 g wholemeal flour

The yeast mixed with sugar dissolves in a little warm water. We put the flour and salt in a bowl, make a hole in the middle and pour the water, oil and mayonnaise. Mix lightly, bringing the flour from the edges inwards until smooth. Knead an elastic dough that does not stick to your hands. Cover with a clean towel and leave to rise until it doubles in volume.

The bread machine can also be used for kneading and leavening.

* Furthermore:

* 2 tablespoons za’atar
* 2 tablespoons olive oil

Za’atar:

* 1 teaspoon dried oregano
* 1 teaspoon dried marjoram
* 1 teaspoon dried thyme
* 1 teaspoon sweet paprika
* 1/2 teaspoon salt
* 1/2 teaspoon grated lemon peel
* 20 g susan

Fry the sesame in an oil-free pan until golden. Put the spices in the coffee grinder and grind until you get a fine powder. Grind the sesame seeds, but short enough to break the seeds. In a bowl, mix the spice powder well with the sesame seeds.

The dough is spread by hand in a tray well greased with oil , in a not very thin layer. Cover again with a towel and leave to rise.

Mix the zest with oil and mix. We spread the obtained dough over the raised dough, then with our fingers we press the dough from place to place, forming small unevenness on the surface of the dough.

Bake on medium heat for about 30 minutes. Leave to cool, then portion.
