I don’t know how it will be with you, but with us the word ” donuts ” is a magic word. :)) Or maybe doughnuts?  It’s enough to say it once and already the house is filled with shouts of joy and suddenly  I have the most obedient children. Should I make donuts every day?

These berlinesse donuts are soft and fluffy and can be filled with jam or chocolate cream. We tasted them simple, powdered with sugar flavored with orange powder .

  • 270 ml milk
  • 50 g sugar
  • 2 yolks
  • 25 g fresh yeast
  • 50 g butter
  • 1/2 teaspoon salt
  • 500 g flour
  • grated orange peel
  • frying oil

Preparation of donuts in Berlin:

Put the yeast in a bowl and mix it with the sugar and warm milk, then add the yolks, melted and cooled butter and orange peel. Mix well with a whisk. At the end we incorporate the sifted flour and mixed with the salt. Knead the dough until it is uniform and becomes smooth and elastic. Leave to rise in a warm place.

During this time we prepare 20 squares of baking paper (~ 10/10 cm) or 30 squares if you want to make the donuts smaller.

Pour the dough on the floured table and knead it a little to get the air out. We then divide it into 20-30 pieces. Each piece of dough is rounded between the palms, giving it the shape of a ball, then it is placed on a piece of baking paper previously prepared.

Cover with a towel and leave to rise for about an hour, maybe even better. As long as you go to pick up the child from kindergarten. :)))

We put oil in a cauldron or in a deep pan and let it heat up very well. Take a ball of dough and carefully pour it into the oil bath. Fry well on both sides, over low to medium heat.

Remove on an absorbent towel, drain off excess oil, then powder with sugar.
