Homemade chocolate with milk powder
- 50 g cocoa
- 250 g milk powder
- 200 g sugar
- 80 ml water
- 1 sachet of vanilla sugar
- 80 g fatty butter (minimum 80% fat)

Homemade chocolate is one of the childhood sweets that Romanians grew up with, combining ingredients found at hand to produce a quick and tasty dessert. It can be prepared in multiple portions that you keep in the fridge for several days, if you wish, so that you always have something sweet at hand, which goes very well with tea, milk or coffee, for example. The consistency can be stronger, crumbly, or softer and creamier depending on how you make the homemade bar syrup.
The preparation steps are simple, starting from weighing the ingredients and arranging them in small bowls or containers, in order to have them at hand and sacrifice a minimum of time. The ingredients for the childhood bar have a special role, so their quality is important: a fragrant and slightly bitter cocoa, black in color, a tasty powdered milk, without a too strong specific taste, and a fresh and fatter butter, maybe even a homemade butter.
First you will make the syrup from water, sugar and vanilla sugar, putting them to boil in a saucepan on the gas or electric hob, taking care to stir constantly so as not to burn. The density of the syrup will give the chocolate fluidity, so you can check it by taking a drop and putting it between two fingers, gluing and peeling them. When the syrup is spread keeping a line, it is dense enough for Romanian homemade chocolate.
When it's ready, take it off the heat and add the butter, stirring to melt and be ready for the rest of the milk chocolate ingredients.
How to make homemade chocolate from these ingredients? In a different bowl you will put the cocoa and milk powder and mix them, so that when you mix them with the liquids they do not form lumps. Pour the mixture of butter and sugar over this chocolate bar composition, slowly, it should be slightly warmer, mixing using a spatula or a wooden spoon or using a food processor with the kneading function. If you use your hands, you will start with a spatula and, after the composition cools down, knead it with your hands.
If you want homemade chocolate with nuts or candied fruit, you will add them at the end, either in pieces, whole or finely chopped. At the end of kneading and mixing the ingredients, remove the dough on a tray greased with butter, using your hands or spatula. You can sprinkle with fruits and nuts, if you want to give it a special look, and let the best simple homemade chocolate harden for a few minutes. If you want it to have other shapes, not the classic squares or rectangles, you can get chocolate poppy teddy bears using silicone shapes.
If you don't add cocoa, you will have a slightly sweeter white homemade chocolate, but just as aromatic, the special taste can be given by the vanilla or rum essence.
If you do not want to consume sugar, the recipe can be adapted to homemade chocolate without sugar, where you replace the ingredient with a syrup, for example, or make a homemade chocolate with honey.
