Pandispan recipe


  • 5 eggs
  • 5 tablespoons sugar (flavored with vanilla)
  • 5 tablespoons flour
  • 3 tablespoons oil
  • 1 tablespoon black cocoa
  • 1/2 teaspoon baking powder

A simple and delicious pandispan , only good to make when you are full of ideas. It can be made only with vanilla or only with cocoa, nuts or other dried fruits can be added.

Simple Pandispan preparation:

Whisk the egg whites with a pinch of salt. Add the sugar and mix until you get a thick and shiny foam. The yolks rubbed with oil are added over the egg whites and mixed lightly, then we put the flour mixed with the baking powder and we mix lightly mixing with a spatula, with movements from bottom to top.

From the above composition we put aside a few spoons (4-5 are enough). Add cocoa and rum essence and mix.

In the cake pan greased with oil and lined with flour we put 2-3 tablespoons of the white composition, then 1 tablespoon of the cocoa composition. Repeat the procedure until we finish the 2 compositions. At the end, shake the tray a little from left to right, to better place the composition in the tray and put it in the oven over medium heat until it browns slightly on top.

The delicious simple pandispan is left to cool then portioned.
