Blackberry ice cream with blueberries and lavender is an absolutely delicious dessert.
I think everyone likes lavender in its scent and color. This summer we prepared many kinds of ice cream for the little ones, but we, the big ones, also enjoyed it.
This time I chose blackberries and blueberries, not cooked at all to keep their vitamins.
I chose a wonderful syrup from my friends from the Kindness of Nature , a syrup that I wholeheartedly recommend. Beyond the wonderful properties of lavender, it has a delicate scent that captivates you.
It perfectly complemented the flavor of my ice cream.

Ingredients:

  • 400 gr mure
  • 2 lg sugar
  • 1 cup blueberries
  • 4 yolks
  • 3 lg sugar
  • 2 lg starch
  • 400 ml of sweet milk
  • 150 gr white chocolate
  • 500 gr of sour cream
  • 50 ml natural lavender syrup

Preparation

The blackberries are washed under a stream of cold water and drained, then sprinkled with sugar and left to cool until the next day. The next day, remove, strain with a blender, then strain the seeds. The sauce obtained is set aside.
A steam bath is being prepared. In a bowl, mix the 4 egg yolks with the 3 tablespoons of raw sugar. Transfer the bowl to the steam bath and let it become creamy and get consistent. Dissolve 2 tablespoons of starch in milk and add, stirring constantly, over the egg mixture. Mix with a whisk until the cream thickens and binds. Set aside, add the broken chocolate and mix to blend. After tempering, incorporate the blackberry sauce and mix well.
The cold cream is mixed until it becomes consistent and becomes fluffy, then the blackberry cream is incorporated. Add a few tablespoons of lavender syrup, mix gently, then sprinkle a few blueberries. Transfer the composition to ice cream or casserole and place in the freezer until the next day.
Leave for a quarter of an hour at room temperature to be portioned.
It is an extremely tasty ice cream, with a subtle lavender scent and fresh taste.
