|Ice cream with caramelized nuts|
* 150 g nut
* 250 ml liquid cream
* 2 yolks
* 100 ml milk
* vanilla essence
* 100 g sugar
Melt half of the sugar in a bowl, over low heat with a tablespoon of water. When it turns golden, add the broken walnut into large pieces, mix well and set aside. Turn it over on a piece of baking paper and let it cool. After they have cooled, break them into pieces and grind them in the mincer with a metal knife.
Rub the yolks with the remaining sugar until white. Dissolve the composition with the milk and put it on low heat. Boil until slightly thickened, stirring constantly. Set aside and leave to cool.
After the egg composition has cooled, mix it with the ground walnuts and whipped cream. Homogenize and put in the freezer.
