Ingredients:

  • 200 g butter
  • 100 g sugar
  • 1 tablespoon flavored sugar with lemon powder
  • 200 g flour
  • 1 baking powder
  • 6 yolks
  • 1 jar of plum jam (300 g)
  • 6 egg whites
  • 100 g sugar
  • 200 g ground walnuts

Preparation Jam cake:

The soft butter mixes with the sugar and flavored sugar until it becomes fluffy like a cream. Add the yolks, one by one, mixing well after each one. At the end we incorporate flour mixed with baking powder and a pinch of salt.

The composition obtained is poured into a tray (25/35 cm) lined with baking paper and put in the oven over medium heat for about 20 minutes, until the cake begins to take on color.

Meanwhile, beat the egg whites until stiff. Add the sugar and mix until you get a thick and shiny foam. Then add the ground walnuts, mixing lightly with a spatula.

Remove the tray from the oven and place the jam on top, leveling slightly. Then pour the composition with walnuts, level and put back in the oven until the top is well baked.

Leave to cool in the pan then portion as desired.
