* 2 yolks
* 2 tablespoons sugar
* 1 tablespoon starch
* 250 ml milk
* 200 g white chocolate
* 250 g mascarpone
* 250 ml liquid cream
* 3 tablespoons cocoa
* vanilla essence
* 50 g mix of dried fruits (mango, papaya, raisins, coconut…)
* 1 wafer sheet
Rub the yolks well with the sugar, until they become like a cream. Add the starch and mix well. Dissolve with a little cold milk, then boil together with the rest of the boiled milk. Stir continuously until it begins to thicken. Put the broken chocolate pieces and mix until it melts. Let it cool.
When the composition has cooled very well, mix it with the mascarpone and whipped cream. We divide everything into 3 equal parts. In one of them we will put the vanilla essence, in one the cocoa and in the other the dried fruits.
We cut the wafer sheet to the size of the tray with detachable ring that we will use. I used a small 17 cm tray.
We put a circle of wafer in the tray and a part of ice cream. Put in the freezer for about 30 minutes. We repeat the operation with each part of ice cream. Cover with the other wafer sheet, with cling film and put in the freezer until completely frozen.
Remove from the freezer 15-20 minutes before serving and turn over on the plate.
