Dreaming of spring… summer… popcorn and fresh fruit I missed a fruit cake. I still had some blackberries in the freezer and I thought of turning them into something good, some delicious cupcakes, only good to satisfy the cravings and for the guests who announced themselves unexpectedly. 😉

  • 100 g of cottage cheese
  • 100 g sugar
  • 50 g butter
  • 4 small eggs
  • 150 g of drinking yogurt
  • 200 g flour
  • 1 baking powder
  • lemon essence
  • For the cream:
  • ~ 100 g blackberries
  • 1 tablespoon sugar
  • 200 ml whipped cream
  • 1 vanilla sugar
  • 1 whipped cream hardener

How to prepare Cupcakes with blackberry cream:

The cheese is mixed with sugar, melted butter and essence until we get a fine cream. Add eggs, one by one, mixing well after each one. We will get a fluffy cream in which we will easily incorporate the drinking yogurt. At the end we put the flour mixed with the baking powder and we homogenize.

The composition obtained is put in muffin tins.

Bake on medium heat for about 30-40 minutes, until the muffins are lightly browned. Remove to a grill and leave to cool.

For the cream:

We put the blackberries in a saucepan with a spoonful of sugar. Put on low heat and simmer until all the fruit juice is reduced. Set aside and leave to cool.

Whip the whipped cream until it begins to gain consistency. Add the vanilla sugar and whipped cream hardener and mix until the whipped cream hardens and becomes fluffy. Incorporate the "jam" of blackberries very well cooled, mixing lightly with a spatula.

We put the cream in a posh and decorate the cooled muffins.
