Red lentil soup
- 200 g red lentils
- 50 g butter or olive oil
- 2 carrots
- 1 parsley root
- 1 small celery
- 1 onion
- 200 ml mashed tomatoes
- 2 cloves of garlic
- 2 bay leaves
- ½ teaspoon ground coriander
- ½ teaspoon chimen
Lentils are a complete food – or almost complete. Its nutritional values are spectacular, if we compare them with many other foods; A red lentil meal, the Turkish recipe for example, is a fantastic source of protein, fiber, minerals and vitamins, all concentrated in a small amount of food with a relatively low carbohydrate content. This is why red lentils (but also green lentils) are often included in the list of healthy foods that should not be missing from any menu.

For red lentil soup, the first step is to clean the vegetables and cut them into large cubes. Heat the butter or olive oil and cook the vegetables in it a little, including the garlic. If you prefer to cook more dietetically, in the Turkish lentil soup recipe you can skip this step.
After you have hardened the vegetables, you will add water, just enough to exceed their level by about 3 fingers. Add a pinch of salt and cook for about 20 minutes – it should be enough for even the most stubborn carrot. Take advantage of your free time and rinse the lentils in more water. For extra flavor, cumin and coriander can be lightly fried, and only then ground and added to soup.
After 20 minutes of cooking, the vegetables should be almost ready. It's time to add the lentils to the lentil soup; with it, you can put mashed tomatoes. Let it boil for about 15 minutes, on low heat, with a lid.
When the lentils are cooked, keep some of the water in a separate bowl and mix the ingredients with a blender. Add some juice, a little, until you reach the desired consistency. You can decorate with freshly ground pepper, paprika powder or simply a few parsley leaves.
