Didn’t you miss a mushroom recipe? Yes. And although I would have liked to make some stuffed mushrooms, because I had some big mushrooms, in the end I made these, let’s call them, nests… Don’t ask me why, because I couldn’t I will answer…

Ingredients for mushrooms nests:

500 g mushrooms
1/2 chicken breast
2 onions
4 cloves garlic
green parsley
2 eggs
salt and pepper

a few slices of bacon

Finely chopped onion, lightly fry in a few tablespoons of olive oil and a little water. When the onion has softened, add the diced chicken breast and the finely chopped mushrooms. Stir and boil until all the juice left by the mushrooms decreases. At the end, salt and pepper to taste and add the crushed garlic. Homogenize and set aside, leave to cool. After it has cooled, add the eggs and the chopped parsley.

Grease the forms with a little oil and cover them with slices of bacon.

These aluminum shapes were the only small shapes I had. Whoever has small ceramic pots, is happy to use them with confidence. 😉 I’m still waiting for Santa. :))

Then put in the oven over medium heat until the bacon is browned.

They are served hot, but they are good and cold, served with other appetizers.
