Have you ever forgotten what you ate the day before? :))) That's how I suffered with this chocolate cake (actually, there were 2, but one was a gift) that I made for March 8 and that I should have shared with you, right? :)) I hope it's not too late and I'll delight you today with… obviously !!!… chocolate . Lots of chocolate ! :))

The quantities are for 2 cakes , one square 20/20 cm and a round one 24 cm in diameter.

Ingredients:

  • For cocoa countertops:
  • 200 g butter
  • 200 g sugar
  • 200 g dark chocolate + 2 tablespoons milk
  • 8 eggs
  • 40 g black cocoa
  • 280 g flour
  • 1 baking powder

  • For the walnut countertop:
  • 6 eggs
  • 100 g sugar
  • 3 tablespoons oil
  • 6 tablespoons flour
  • 200 g ground walnuts
  • 1 baking powder
  • esenta de rom
  • For the cream:
  • 500 g dark chocolate
  • 500 g mascarpone
  • 400 ml liquid cream
  • 4 tablespoons brandy
  • For the glaze:
  • 300 g dark chocolate
  • 100 ml liquid cream
  • 100 g butter

Preparation Martisor chocolate cake:

Cocoa tops:

We mix the soft butter at room temperature with the sugar until it becomes fluffy like a cream. Melt the chocolate together with the milk in the microwave, mix well, leave to cool, then incorporate in the butter cream. Then we put the eggs, one by one, mixing well after each one and the rum essence. Mix the flour with cocoa and baking powder, then mix it lightly in the composition, mixing with a spoon or spatula, with movements from bottom to top.

Divide the composition into 4 parts and bake 4 sheets (2 squares, 2 rounds) in a tray lined with baking paper, over medium heat, about 20 minutes, each. Remove to a grill and leave to cool.

Walnut countertop:

Separate the egg whites from the yolks. Beat the egg whites hard with a pinch of salt. Add the sugar and mix until you get a hard and shiny foam. Rub the yolks with oil and rum essence over the meringue and mix lightly. Mix the flour with ground walnuts and baking powder and add lightly to the composition.

Divide the composition into 2 parts and bake 2 countertops (1 square and 1 round) in a tray lined with baking paper, over medium heat, about 30 minutes. Remove to a grill and leave to cool.

Cream:

Melt the chocolate over low heat with the whipped cream. When it has reached boiling point, remove from the heat, put the brandy and mix well. Let cool until the cream hardens.

Mix the mascarpone until it becomes fluffy, then add a tablespoon of chocolate cream, mixing vigorously. We will get a chocolate and fluffy cream. And hey, if you're not in a hurry with the assembly, you're left without it. :)))

Chocolate glaze:

Melt the chocolate in the microwave with the whipped cream and butter. Homogenize and leave to cool.

The tops are lightly syruped with a syrup made of 100 ml of water, 50 g of sugar and 2 tablespoons of brandy.

Divide the cream into 4 parts. On the plate we will put a cocoa top, a part of the cream, the walnut top, the second part of the cream and another cocoa top. We repeat the operation with the second cake.

Cover with cooled glaze and decorate as desired.
