  • Potato meatballs:
  • * 4 medium potatoes
  • * 1 or
  • * 2 tablespoons flour
  • * 2 cloves garlic
  • * 1 small onion
  • * green parsley
  • * salt and pepper
  • * For the sauce:
  • * 1 cup tomato juice
  • * 3 cloves garlic
  • * salt and pepper
  • * basil and oregano

Preparation Potato meatballs with tomato sauce:

Potato meatballs:

Put the potatoes on a small grater. Drain the leftover juice and salt and pepper to taste. Add the crushed garlic, chopped green parsley and finely chopped onion. Homogenize, then add the egg and flour.

Heat oil in a pan and spoon the potato mixture. With a spatula they turn from side to side. Remove on an absorbent towel to drain excess fat.

Tomato sauce:

Tomato juice is boiled together with crushed garlic, salt and pepper to taste, basil and oregano. Bring to a boil until the flavors are released. Pour the sauce over the hot meatballs and serve sprinkled with green parsley.
