|Mint ice cream|
I was initially tempted to write "dementia" :))) but even if it's dementia good… it's still ice cream WITH mint :))
* 250 g mascarpone
* 250 ml liquid cream
* 2 yolks
* 1 tablespoon sugar
* 100 ml milk
* 200 ml mint syrup
* 2 was Neapolitan
The yolks are mixed with the sugar until they become fluffy like a cream. Add the hot milk, mix well and put it back on the fire, until the composition thickens a little. Leave to cool.
Meanwhile, whip the whipped cream and mix with the mascarpone. After the egg composition has cooled, add a little to the cream mixture, stirring constantly. At the end, pour the mint syrup and mix well.
Put in the freezer for ~ 1 hour, until it hardens. Homogenize, then layer over a wafer sheet. Cover with the other sheet, press a little and put in the freezer.
After 1 hour, when it has hardened enough, place a weight on top, stick the wafer sheet well.
