Moldovanian  sweet bread recipe in 2021

* 1 kg of flour
* 10 eggs
* 220 g butter
* 320 ml milk
* 50 g of fresh yeast
* 300 g sugar
* vanilla and rum essence
* 5 g of salt
* peel of 1 lemon
* peel from 1 orange
* 40 g oil

* Filling:

* 200 g walnuts
* 200 g sugar
* 100 g cocoa
* free of rum
* cinnamon
* milk

The flour and eggs are put at least 6 hours before in the work room, and the flour is sifted beforehand.

Filling:

The ground walnut is mixed with sugar and cocoa, essence and cinnamon and then scalded with milk. Add milk until the desired consistency is obtained.

Maya:

60 g of flour is scalded with 100 ml of milk and beat until it becomes like a soft paste, like a cream. Separately soak the yeast with a little milk, 1 teaspoon of sugar, 1 teaspoon of flour and mix well. Cover with a towel and heat up. After the yeast has risen, mix it with the mayonnaise composition kept warm, beat well, then put it back up, in a warm place.

Meanwhile, beat the yolks with half the amount of sugar and salt until they become like a cream.

When the mayonnaise has risen, put it in a bowl with flour, egg yolk cream, melted butter (warm, not hot), lemon and orange essences and peel, the rest of the warm milk in which I melted the other half of the amount of sugar. Knead this mixture well for 1 hour, then leave to rise for at least 2 hours.

When kneading, grease your hands with oil and continue kneading until the crust forms blisters. The dough should not be hard, but rather soft. If it is too old, add 3-4 beaten egg whites and knead well. Cover with a towel and leave to rise in a warm place.

When the dough has risen well, take pieces, spread a little on the table greased with oil, grease with walnut filling. Roll it, put it in the cake pan, let it grow well, grease the yolk with a little milk and put it in the oven on low heat.
