It's summer, it's hot and we try to spend as little time in the kitchen as possible. That is why we try to put into practice simple recipes, easy to make, but at the same time to be full. For today I propose this omelette with pumpkin and tomatoes, fragrant and very tasty.
~ 100 g cheese
salt and pepper
hot pepper flakes
Peel a squash, grate it and slice it. So is the tomato. We put them around a heat-resistant dish well greased with oil. Season with salt, hot pepper flakes and oregano.
Mix the eggs with a pinch of salt and pepper, until they double in volume. Add diced cheese and chopped green basil. Pour the composition into the bowl and sprinkle with a little grated cheese.
Bake over medium heat until lightly browned on top.
