Ancuta made me want her salad. I decided to go to the kitchen, but in the end, I don't know why :)) something else came out. A simple recipe , even a very good one, I could say, considering that the dwarves also had the most fierce criticism of me. :)))

one pan coconut curry rice with chicken and vegetables

Ingredients:

  • 1 cup rice
  • ~ 200 g chicken pastrami
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn kernels
  • salt and pepper with garlic
  • 1/2 teaspoon curry
  • 50 g butter

Preparation Rice with curry and vegetables:

The rice is washed in several waters, then boiled in salted water. Boil as long as the rice grains do not become sticky. Check (on the "snack" :))) from time to time if it is cooked. It drains water.

In another pan, boil the peas and corn in salted water. It doesn't have to be cooked much, it boils a few times. When they are ready, put them in a strainer.

Melt the butter in a pan over low heat, add the rice, diced chicken pastrami , peas and corn. Match the taste of salt and pepper and add curry. I put 1/2 teaspoon, but you can put more or less, as you like.

Homogenize, give a few more boils… and you're done, the food is good to serve.
