When you feel like making pancakes, I suggest you make this cake. Okay, you can use cream and fill the pancakes individually, but to give a festive air to a meeting with friends, make this cake. They will be really impressed. 😉
500 g yogurt
50 g butter
~ 300 g flour (2 dogs)
50 g sugar
1 teaspoon baking powder
1 teaspoon vanilla sugar
Mix eggs with a pinch of salt until they double in volume. Add the sugar and vanilla sugar and mix until the composition becomes a cream. Pour the melted butter and yogurt and mix well. At the end, add the flour mixed with the baking powder and mix lightly. Put the composition in the fridge for about half an hour, during which time we will prepare the cream.
For the cream:
2 tablespoons cocoa
100 g sugar
2 tablespoons milk
100 g dark chocolate
150 g butter
Mix the yolks with the sugar until they become like a cream and double in volume. Add cocoa, mix, then "dissolve" with cold milk. Put the bowl in a bain-marie and when it starts to thicken, add the broken chocolate pieces. Mix well until the chocolate melts, then add the butter left at room temperature and mix until it melts. Let cool.
Bake the pancakes in a non-stick pan of the desired size.
Grease each pancake with cream, while overlapping them. Let cool until the cream hardens, then garnish with whipped cream and portion as desired.
