Pancakes with cocoa and caramel ice cream |
* 2 eggs
* 300 ml milk
* 300 ml of mineral water
* 100 g sugar
* 4 tablespoons oil
* ~ 400 g flour
* 3 tablespoons cocoa
* free of rum
The flour is mixed with warm milk and mineral water, to leave a composition like sour cream. Add sugar, egg yolks mixed with oil, cocoa and rum essence. It mixes well. At the end, add the beaten egg whites with a pinch of salt.
* For ice cream:
* 100 g sugar
* 300 ml milk
* 1 tablespoon starch
* 250 ml liquid cream
We caramelize the sugar, then "quench" it with half the amount of cold milk. Bring to the boil, then put the "dissolved" starch with the rest of the milk. Simmer over low heat, stirring constantly, until it begins to thicken. Leave to cool and when it has cooled completely, mix with whipped cream. Homogenize and put in the freezer until it hardens.
Bake the pancakes in a pan greased with a little oil, fill with ice cream and fold or roll, as desired.
