Pancakes with cheese and meringue

Who doesn't love these wonderful pancakes? They are so delicious that you can't stop at one pancake, you have to eat at least two! It's true that they have a lot of calories, but once, twice a year, I don't think they gain that much weight! I chose to prepare them with sweetener, but you know that you can use sugar in the same amount. You have to prepare them too, you can't miss such goodness!

For the cheese filling:

  • 500 gr cow's cheese
  • 2 eggs
  • 5-6 tablespoons sweetener powder ( Green Sugar I used)
  • grated lemon peel
  • vanilla essence
  • orange essence
You also need:
  • 12 pancakes ( recipe here )
  • 3 eggs husband
  • 4-5 tablespoons of sour cream
  • 4 tablespoons sweetener powder
  • 1 teaspoon vanilla
  • 3 tablespoons sweetener for meringue
Method of preparation:
I prepared the pancakes the day before, but you can prepare them the same day, it's up to you.
Cheese filling:
Mix the cheese with the eggs and the sweetener.
Add the essences, grated lemon peel and mix until all are incorporated.

Separate the 3 eggs.
Mix the yolks with 4 tablespoons of sweetener and vanilla.
Add the sour cream and mix well.

Take a pancake, put a spoon full of filling (it's from where) and wrap it. You can also run them.
Do this until all the pancakes are full.
Prepare a ceramic pot, I used smaller pots, because I split the pancakes, so I used 3 pots.
Place the filled pancakes next to each other.
Pour the cream mixture on top.
Put them in the hot oven, at 180 degrees, for 15-20 minutes.
During this time prepare the meringue:
Put a pinch of salt over the 3 egg whites and mix them until you get a foam.
Add the sweetener spoon by spoon and mix at a higher speed until the meringue becomes firm.

Remove the pancakes from the oven, place the meringue and spread it lightly on all the pancakes.

Put them back in the oven, about 10-12 minutes, until the meringue browns.
When they are ready, take them out of the oven and let them cool a bit, then they can be served.
