Ingredients:

  • For the countertop:
  • 3 eggs
  • 3 tablespoons sugar
  • 2 tablespoons oil
  • 2 tablespoons cocoa
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder

  • For chocolate panna cotta:
  • 200 g dark chocolate
  • 350 ml evaporated milk
  • 250 ml whipped cream
  • 100 ml of milk
  • 2 tablespoons cocoa
  • 10 g gelatin
  • For white chocolate panna cotta:
  • 100 g white chocolate
  • 200 ml whipped cream
  • 5 g gelatin
  • For decoration:
  • 200 ml whipped cream
  • colored candies

Method of preparation:

Wheat:

Whisk the egg whites with a pinch of salt. Rub the yolks well with oil and rum essence to taste. Add the sugar over the egg white foam and mix well until you get a consistent and glossy foam. Pour the yolks and mix lightly, and at the end add the flour mixed with cocoa and baking powder. Mix gently, mixing with a spatula, with movements from bottom to top.

Pour the composition into a tray (24 cm in diameter) lined with baking paper and bake on medium heat for about 25-30 minutes. Remove the top on a grill, let it cool very well then cut it into 2 parts.

White chocolate panna cotta:

We hydrate the gelatin in a few tablespoons of cold water.

Chocolate broken into pieces, over sour cream I poured cream for whipped cream, melt it over low heat or baine marie. When it has reached boiling point, set aside, mix and add hydrated gelatin. Pour the composition into a silicone mold and refrigerate until it thickens well and can be removed from the mold.

Chocolate panna cotta:

We hydrate the gelatin in a few tablespoons of cold water. We "unwrap" the cocoa with warm milk.

In a bowl, mix the evaporated milk and whipped cream. Add the broken chocolate and the cocoa milk. Put on the fire and bring to the boil. Set aside, mix and add hydrated gelatin. Refrigerate until the composition begins to thicken, to catch the consistency.

In the tray in which we baked the worktop, lined with food foil, we put a part of the worktop. In the middle of the worktop, right in the center, we put the white chocolate panna cotta.

Pour over the chocolate panna cotta, cover with the second top, wrap well in foil and refrigerate for a few hours, preferably overnight.

Pour the cake on a plate, remove the cling film and garnish with beaten fiscal and colored candies.
